The Science

We specifically extract at a molecular level, using a super-critical fluid to extract the exact molecules we require. These molecules form part of the plants own immune system. They are produced through the secondary plant metabolite (SPM) pathway, which can be specifically elicited by a single fungal protease, or a viral or bacterial attack to the plant. This triggers an immune response, dramatically increasing the level of SPM.

When farming introduces agrochemicals, breeding programs, GM development, and monoculture production techniques, for improved yields, we negatively impact mother natures intended health benefits. Research has found levels of secondary plant metabolites are significantly reduced (often not produced) in modern varieties of fruit and vegetables, stopping mother nature in her tracks.

Why? We often find the taste characteristics of SPM as being undesirable. This is because they taint the taste (including bitterness). Suppliers have developed processes to specifically remove them from our food.  These include ion exchange resins or membrane separation technologies, or simply bred out. This has all led to a dramatic reduction of secondary plant metabolites in the food, including organic.
